Pasta with Spinach
Cascabel Pasta with Spinach

Bring a large pot with 4 cups of water to a boil over high heat.
Add 2 cups of penne pasta and cook until tender (7-10 minutes).
Drain the pasta in a colander.
While the pasta is cooking, prepare the sauce. Add 2 tbsp of butter and 2 minced garlic to a deep skillet or pot and sauté over medium heat for 1-2 minutes, or just until the garlic is soft and fragrant, but not brown.
Turn the heat down to medium-low and add 2 cups of tomato sauce, 1 cup of greek yogurt and 1 tsp of Cascabel Salsa Gourmet.
Whisk until the 3 ingredients have fully blended and the sauce have thickened.
Turn the heat to low to keep the sauce warm. Season the sauce with 1/4 tsp salt, 1/4 tsp paprika and a generous amount of freshly cracked pepper.
Add 4 cups fresh spinach to the sauce and stir until it has wilted and become limp.
Finally, add the cooked and drained pasta to the spinach sauce, add Parmesan Cheese and stir to combine.
Serve and enjoy.
